How to make it

  • Bring a large pot of salted water to a boil, add beans & cook about 6 minutes. Drain well. Put oil in a large sauce pan, add onion, ginger, chilies & cumin seeds & cook over high heat until onions are soft & brown, about 8 minutes. Add coriander & cayenne, stir & cook about 2 minutes, add tomatoes & cook until most of the liquid is gone, about 5 minutes, add the beans, salt & cook until beans are heated then cover & cook until beans are crisp tender, about 10 minutes. Stir in cilantro & place on a large deep platter, serve either warm or room temperature.

    I WENT OUT WITH A MAN FROM MOROCCO & HE WOULD COOK LAMB SHANKS LIKE THIS, SORT OF
    2 CANS WHOLE TOMATOES CRUSHED
    1-2 MEDIUM ONIONS
    2 POTATOES CUT TO BITE SIZE PIECES
    1 BAG LENTILS
    3 CARROTS CUT TO BITE SIZE
    6 CLOVES GARLIC
    1 CAN OF WATER (FROM EMPTY TOMATO CANS)
    SEA SALT & PEPPER
    CORRIANDER & CUMIN TO TASTE
    HE'D BROWN THE LAMB SHANKS IS OLIE OIL. THEN ADD THE ONIONS, THE POTATOES, GARLIC & CRROTS.
    STIRRING, HE'D ADD THE LENTILS, 2 CANS TOMATOES CRUSHING EACH ONE BY HAND. THEN ADD THE CAN OF WATER & SEASONING. HE'D BRING THE INGREDIENTS TO A BOIL FOR 5 -10 MINUTES. HE'D TURN THE HEAT DOWN & LET IT COOK FOR 2 HOURS, STIRRING IT EVERY 20 MINUTES OR SO. HE'D SERVE IT OVER COUS COUS.. IT IS DELICIOUS & YOUR DISH REMIDS ME OF HIS.
