Mexican Chicken Casserole Recipe
This easy dish is a family favorite. Nothing has to be exact and you can use left-over chicken.

Ingredients
  • 1 chicken, boiled/roasted, shredded
  • 1 med. onion, chopped
  • 1 - 3 cloves garlic, chopped
  • 1 - 2 cans Refried Beans
  • 1 can Cream of Mushroom (or whatever, cheese?) soup
  • 1 can Cream of Chicken soup
  • 1 can tomato sauce
  • 1 pkg Taco Seasoning mix
  • Corn tortilla chips
  • Black olives (garnish)
  • Green onions, chopped (garnish)

Directions
  1. Saute onions in a bit of olive oil until edges start to brown and add garlic until aromatic.
  2. Add soups, tomato sauce, seasoning, onions, and chicken in a large bowl and mix well.
  3. Put crushed chips in bottom of greased baking dish, spread beans over, and pour mixture over beans.
  4. Top with more crushed chips and bake in 350 degree oven until top is browned and bubbly.
  5. Add cheese to the top in the last few minuets of baking, if you like.
