Smothered Chicken

- Several years back I helped friends start a new restaurant. The competition had chicken recipes with stuff on top of them or fixed along with special foods. I was asked to come up with a recipe that could match their recipes. What follows is my attempt. It became very popular and we sold 2 cases of chicken a day. shopping list
- Smothered chicken shopping list
- 1 whole chicken breast flattened to about 1/2 an inch. shopping list
- 2 grilled onion slices (purple onion would be OK, but white works well also) shopping list
- 2 grilled bell pepper rings 1 red and 1 green shopping list
- 2 grilled slices of apple smoked bacon shopping list
- 2 slices swiss cheese shopping list
- 1 small amount of your favorite BBQ sauce shopping list
- 1 small cup of BBQ sauce shopping list
How to make it
- Put chicken on the grill serving side down, about half way through cooking
- time left and turn about 1/4 inch. (makes great grill marks)
- After cooking on that side about 5 minutes, if it is very thin a little less cooking time.
- When you turn it over spread the small amount of BBQ sauce on it then place the bacon,onions, peppers and the cheese on top put the cheese on an angle it looks nice that way. Like stacking pancakes. When the cheese starts to melt, it should be served with the small cup of BBQ sauce on the side.
- I served this with Garlic Mashed Potatoes on the side and some Texas toast and a salad.
- I didn't know if this was going to make it are not when we opened, but the Owners where pleased and it was a hit.
