I used to take this to hunting camp and everyone loved it. Freezes well so you can pack it in on horseback.

Ingredients
  • 1 1/2-2 lbs chicken tenders or breast meat cubed
  • 1 medium onion chopped
  • 4 stalks celery chopped
  • 2 cans cream of chicken soup( low sodium)
  • 1 16 oz can corn
  • 1 16 oz cream corn
  • 1 C milk
  • 1 medium brick velveeta cheese
  • Salt, Pepper, Garlic powder
  • butter/ olive oil
  • chicken broth

Directions
  1. Saute chicken, onion, and celery with seasoning in oil or butter
  2. Add about 2 cups chicken broth and simmer for 20 minutes
  3. Add remaining ingredients
  4. Cook on medium to low heat for 30 minutes stirring frequently so cheese doesnt burn
