  • 6 boneless skinless chicken breasts
  • 7 large idaho potatoes
  • 2 medium sized italian squash / (zuchinnis)
  • 2 medium sized yellow squash
  • 1 package of button top mushrooms (about 15)
  • 1-2 white or yellow onions
  • 2 medium sized tomatoes
  • 1-2 sticks of butter.
  • 1 clove of fresh garlic
  • 1 quart olive oil
  • Italian seasoning
  • seasoned salt
  • minced garlic
  • seasoned salt
  • emerils essence (or your fav. seasoning similar to this.)
  • dried parsley flakes
  • pepper

Directions
  1. Preheat oven to 425 degress.
  2. You will need a large deep baking pan for this dish.
  3. Peel potatoes, cut potatoe in half, then cut the halves into halves. Do the same with the tomatoes and onions. Cut the 2 different kinds of squah into thick slices (rounds}.
  4. Throw all of the vegetables into the baking dish, drizzle a good amount of olive oil on the veggies so that all of the veggies are coated, throw in the fresh whole garlic in with the veggies. Add italian seasoning, parlsey and seasoned salt, and minced garlic to taste. (I use about 1 cup full of a mixture of these dry ingredients.) Mix with hands so that all the veggies are covered in oil and seasonings. Fill the pan with water enough so that your almost covering all the veggies but not completly, you dont want a pan FULL of water but enough to cook them. Place chicken breasts on top of the vegetables, drizzle dry ingredients (seasonings) its hard for me to say exactly how much i usuallt just eye it to my tastes, on the chicken breasts, place i whole garlic piece on top of each chicken breats. (you chicken breasts should be half in the water). Cut butter into slices and place on top of the veggies and chicken, Cover with aluminum foil and cook for about 30 minutes or until potatoes and chicken are cooked. Remove foil and cook for 15 minutes uncovered. Once cooked, broil uncovered for a few minutes to brown the chicken. Serve in pan.

What temp do you cook this at? 30 min is not very much time do the veggies get cooked in that short amount of time?

I cook it at 425, as for the time, it varies depending on the portion your cooking. When i make 6 servings i cook it for about 45 minutes to an hour depending on the oven, just keep an eye on it and adjust. Ill edit that, sorry.
