BLACKBERRY CAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pederson Estate in Duncanville, Texas in 1982.

Ingredients
  • 1 package white cake mix with pudding
  • 3 ounce package blackberry flavor gelatin
  • 10 ounce package frozen blackberries thawed with juice
  • 4 eggs
  • 1/2 cup vegetable oil
  • 1/4 cup hot water
  • Frosting:
  • 10 ounce package frozen blackberries with juice
  • 12 ounce carton frozen whipped topping thawed

Directions
  1. Preheat oven to 350 then grease and flour rectangular pan.
  2. In large bowl combine dry cake mix and gelatin.
  3. Add blackberries with juice, eggs, oil and water then beat until well blended about 3 minutes.
  4. Pour into prepared pan then bake 30 minutes and cool.
  5. For frosting in small bowl fold blackberries and juice into whipped topping.
  6. Spread over cake then refrigerate at least 2 hours.
