Southern Fried Catfish Recipe
The way catfish was meant to be eaten: fried in a cornmeal batter. Once you try this recipe, you’ll never want catfish prepared any other way!

Ingredients
  • Canola oil, enough for frying
  • 2 pounds skinless catfish fillets, cut into strips
  • 4 eggs
  • 1/2 cup whole milk
  • 1 cup yellow cornmeal
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper, more if desired
  • Salt and pepper to taste

Directions
  1. Heat canola oil over medium heat in a 12-inch cast iron skillet to 350 degrees.
  2. In a small bowl, beat together eggs and milk.
  3. In a shallow dish, combine cornmeal, paprika and cayenne pepper. Add salt & pepper to taste.
  4. Use a paper towel to blot the catfish fillets dry.
  5. Dip each piece in egg mixture, then dredge in seasoned cornmeal. Fry fish in batches, turning once, until deep golden brown, about 3 minutes on each side.
  6. Remove fish from pan an allow to drain on a paper-towel lined plate.
