Ingredients
  • 1 tablespoon quick rising yeast
  • 4 cups flour
  • 1/4 cup granulated sugar
  • 1/4 cup soft butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon pure lemon extract
  • 1-1/4 cup lukewarm water
  • 2 well beaten eggs
  • Nonstick cooking spray
  • 1/2 cup raisins
  • 1/2 cup prunes
  • 1/2 teaspoon pure lemon extract
  • 4 tablespoons brown sugar
  • 1/4 cup evaporated skim milk

Directions
  1. Combine flour, yeast, salt and sugar together in a bowl. In another bowl cream butter, water, lemon extract and eggs. Combine contents of both bowls and mix until dough is soft. Place dough in another bowl sprayed with cooking spray then cover and let rise for 20 minutes. Punch down and let dough rise for an additional 20 minutes. While dough is rising place raisins and prunes in a little water until tender. Place in blender and mix or mash with potato masher. Add brown sugar and lemon extract. Roll out dough forming a rectangle. Sprinkle with filling and roll up sealing edges with a little water. Place roll on baking sheet lightly sprayed with cooking spray then shape roll into circle and brush top with evaporated skim milk. Slit top of roll with sharp scissors until some of the filling dhows through. Bake at 400 for 30 minutes.
