Ingredients

FOR THE KOFTA KEBAB

5 skinless chicken breasts - ground

1 small ripe tomato

1 red hot chili

1/2 bunch of parsley

1/2 bunch of cilantro

1/2 teaspoon ground middle eastern spices

pinch of cayenne

1 teaspoon of cinammon

FOR THE SAUCE

3 cloves of garlic minced

1 small onion finely chopped

3 table spoons virgin olive oil

2 potatoes peeled and disced

salt and pepper to taste

1/2 teaspoon cinammon

1 jar of pasata or 1 can 14oz crushed tomato

Directions

In a mixer or a blender, place tomatoes,onions,garlic,chili,cilantro and parsley and whiz for about 1 minutes. i a large bowl mix the ground chicken and the blend thoroughly, and the spices . shape into short and thicjk sausage shapes and brown in a skillet till browned all over.

in a deep 12;; frying pan heat oil,add garlic and onions and saute

for 2 minutes . add pasata or crushed tomaotes,cinammon and cook for few minutes. add diced potatoes cook for 4 minutes on lowe-medium heat. place the cooked kofta snugly into pan,coat with some of the sauce and cook for about 20 minutes.

serve with salad of shredded lettuce,sliced c ukes and cherry tomatoes halved
