Salmon Teriyaki Rice Bowl Recipe

Ingredients
  • 3/4 cup Daikon- Japanese radish julienned
  • 2 tbs seasoned rice vinegar
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup sake
  • 4 slamon filets, center cut
  • 1 cup multi-grain rice
  • 2 cups chicken broth or vegetable broth
  • 2 green onions thin sliced
  • 1 tbs plus 1 tsp toasted sesame seeds

Directions
  1. Toss radish with vinegar and set aside
  2. Make a teriyaki sauce by combining sugar, soy sauce and skae in a small bowl
  3. Place in sauce pan, stir and bring to a boil
  4. remove from heat and let cool
  5. Place salmon in a shallow baking dish and pour suace over filets
  6. Chill 1 hour
  7. Place broth in pan and add rice and bring to a boil, cover reduce heat to low and simmer about 40 minutes or rice is tender, liquid absorbed
  8. Remove from heat and let rest covered about 10 minutes
  9. Bake salmon in a 450F oven, spooning sauce over fillets at least twice
  10. Cook until firm about 10 to 12 minutes
  11. Fill bowls with rice, salmon and teriyaki sauce
  12. Top with the daikon and green onion
