I'm not sure this is a "kosher" potato pancake, but when I woke up this morning an angel told me to mix this up and it would work. It sure did.

  • 1 medium potato, raw
  • 1/2 cup onion
  • 1/2 cup Eggbeaters (equals 2 eggs)
  • 3 tbsp chickpea flour
  • 1 tsp salt
  • 1/2 tsp pepper

Directions
  1. Grate the potato and onion. I used a food processor to get it over with. Noisy but fast.
  2. Mix the the potato, egg, floour salt and pepper well.
  3. Spray a large griddle liberally with PAM cooking spray and heat to medium high. I use an electric griddle for this and put the setting at about 350.
  4. 3 table spoons of mixture makes 1 pancake.
  5. Cook each side about 3 - 4 minutes until browned.
  6. Servings 6

These sound really great! But why chickpea flour? I'm an amatuer(sp?) cook so I don't really know what that is. Can you use regular white flour?
