How to make it

  • Grate the potato and onion. I used a food processor to get it over with. Noisy but fast.
  • Mix the the potato, egg, floour salt and pepper well.
  • Spray a large griddle liberally with PAM cooking spray and heat to medium high. I use an electric griddle for this and put the setting at about 350.
  • 3 table spoons of mixture makes 1 pancake.
  • Cook each side about 3 - 4 minutes until browned.
  • Servings 6

    These sound really great! But why chickpea flour? I'm an amatuer(sp?) cook so I don't really know what that is. Can you use regular white flour?
