Mustard and garlic lend plenty of flavor to this dressing for salads. Adapted from Marge Werner's recipe posted in Light and Tasty Magazine Aug/Sept 2002.

Ingredients
  • Ingredients:
  • 2/3 cup fat-free mayonnaise
  • ¼ cup white wine vinegar or cider vinegar
  • 2 Tbs. minced fresh parsley
  • 2 Tbs. Dijon mustard
  • 1 Tbs. Equal or equivalent
  • 1 Garlic clove, Minced
  • 1 tsp. Dried thyme
  • 1/8 tsp. Pepper
  • Salad greens and vegetables of your choice

Directions
  1. In a small bowl, whisk together the first eight ingredients. Cover and refrigerate for at least 1 hour. Serve over salad. Refrigerate leftovers.
  2. Serving size: 2 tablespoons
  3. Calories per serving: 27, Fat: 1, Cholesterol: 2mg, Sodium: 255mg, Carbohydrate: 5g
  4. Diabetic Exchange: ½ starch
