How to make it

  • Set oven for 350.
  • Dissolve the coffee in the water. Set aside.
  • In a mixer on medium speed, mix the sugar and oil for 10 minutes, then add the eggs and vanilla until thoroughly combined.
  • Sift the dry ingredients in slowly, and mix until combined.
  • Place the batter in a well greased bundt/tube pan. (The round pan with the hole in the middle.
  • Bake for 45-50 minutes. Let cool for 15 minutes before taking it out of the pan.
  • If desired, the icing makes a beautiful and delicious topping; just combine all ingredients, and add more confectioner's sugar if too runny.
