Heaven Coffee cake

This recipe is one that I make every week for my family. the reason there's no picture of it is because by the time i get the camera out, the cake is half gone!! Definitely this will be a family favorite, perfect with hot cocoa or coffee. Read more the real trick is to mix the sugar and oil for at least 10 minutes before adding anything else. enjoy!! See less
Ingredients
- 1/4 cup coffee shopping list
- 3/4 cup hot water shopping list
- 2 cup oil shopping list
- 1 cup sugar shopping list
- 4 eggs shopping list
- 2 Tbsp. vanilla shopping list
- 2 cups flour shopping list
- 1/3 cup cocoa shopping list
- 2 tsp. baking powder shopping list
- Topping: shopping list
- 1 cup confectioner's sugar shopping list
- 2 Tbsp oil shopping list
- 1tsp coffee dissolved in a few teaspoons of hot water shopping list
How to make it
- Set oven for 350.
- Dissolve the coffee in the water. Set aside.
- In a mixer on medium speed, mix the sugar and oil for 10 minutes, then add the eggs and vanilla until thoroughly combined.
- Sift the dry ingredients in slowly, and mix until combined.
- Place the batter in a well greased bundt/tube pan. (The round pan with the hole in the middle.
- Bake for 45-50 minutes. Let cool for 15 minutes before taking it out of the pan.
- If desired, the icing makes a beautiful and delicious topping; just combine all ingredients, and add more confectioner's sugar if too runny.
