BEEF IN A CLOUD

Ever hear of pudding on a cloud, well this is it's maindish counterpart. LOL
Ingredients
- 1 lbs ground beef shopping list
- 1 medium onion chopped shopping list
- 1 green pepper chopped shopping list
- 4 garlic cloves chopped shopping list
- 1 tbsp olive oil shopping list
- 1 cup V-8 juice shopping list
- 1 packet onion soup mix shopping list
- 4-5 cups leftover mashed potatoes shopping list
- salt & pepper to taste shopping list
How to make it
- Heat olive oil in frying pan (medium to medium-high heat), add onions, garlic and green peppers.
- Cook until onions are clear.
- Add ground beef and season to taste with salt & pepper
- When meat is cooked drain excess grease from frying pan.
- Add juice soup packet.
- Spread mash potatoes in bottom and sides of pie or cake pan, add ground beef mixture to center of pan, then cover everything with the remaining mash potatoes.
- Pre-heat oven at 400 degrees.
- Place pan in oven and bake until mash potatoes brown on top. Takes about 20-30 minutes, just watch to make sure you don’t burn the pie.
- When done remove from oven, cool for approx 5 minutes before cutting and slice like a pie
