Corona Chicken With A Salsa Side Dish

- 3 – 2 ½ lb chickens, split in half (or six portions) shopping list
- Marinade: shopping list
- 3 jalapeno peppers, seeded and chopped shopping list
- 3 cloves garlic, minced shopping list
- ½ bunch cilantro, chopped shopping list
- 2 cups safflower oil (vegetable) shopping list
- 1 cup Corona beer shopping list
- 2/3 cup fresh lime juice shopping list
- 2/3 cup fresh orange joice shopping list
- fresh ground black pepper shopping list
- The salsa: shopping list
- 2 cloves garlic shopping list
- 1/2 onion, quartered shopping list
- 1 or more jalapeno peppers, seeded shopping list
- 1/4 cup packed cilantro shopping list
- 1 lb firm, ripe tomatoes, seeded and coarsely chopped shopping list
- 2 tbsp vegetable oil shopping list
- 1 juice of 1 lime shopping list
- salt and pepper to taste shopping list
How to make it
- -For the chicken-
- Combine the copped jalapenos with the garlic, cilantro, oil, beer, lime and orange juices.
- Whisk thoroughly.
- Rub the chicken with the marinade and fresh ground pepper
- then marinate for at least 1 hour.
- Grill chicken over low heat. (Basting while cooking will increase the spiciness of the chicken.)
- -For the salsa-
- In a blender or processor, combine garlic, onion, peppers, cilantro and tomatoes and whirl briefly until coarsely chopped. (For a drier, chunkier consistency, chop and mix by hand. )
- Add oil and lime juice then whirl until finely chopped.
- Add salt and pepper if desired.
- Refrigerate in a non metallic bowl.
