Chicken Tostadas

- 2 fresh jalapeno chile peppers,seeded and finely chopped shopping list
- 8 cloves garlic,minced shopping list
- 3 Tbs chile powder shopping list
- 3 Tbs lime juice shopping list
- 1/4 tsp bottled hot pepper sauce shopping list
- 1 medium onion,sliced and seperated into rings shopping list
- 2 lbs boneless,skinless chicken thighs shopping list
- 1 16 oz. can refried beans shopping list
- 10 purchased tostada shells shopping list
- 3/4 c shredded cheddar cheese shopping list
- 2 c shredded lettuce shopping list
- 3/4 c bottled salsa shopping list
- 3/4 c light sour cream shopping list
- 1/2 c sliced pitted ripe olives shopping list
How to make it
- In 3-1/2 to 5 qt. slow cooker,combine chile peppers,garlic,chile powder,lime juice and hot pepper sauce. Add onion and chicken.
- Cover and cook on low setting for 5 to 6 hours or high setting for 2-1/2 to 3 hours
- Remove chicken and onion from cooker,reserving 1/2 c of the cooking juices. Using 2 forks,shred chicken. In med. bowl,combine chicken,onion and reserved cooking juices.
- Spread refried beans on tostada shells. Top with hot chicken mixture and shreeded cheese. Serve with lettuce,salsa,sour cream and olives.
