Brussel Sprouts With Chorizo

- kosher salt to taste shopping list
- 1 lb. brussel sprouts,trimmed and halved lengthwise shopping list
- 2 tsp extra-virgin olive oil shopping list
- 6 oz cured Spanish chorizo,quartered lengthwise and cut crosswise into 1/4" slices shopping list
- 1/2 small yellow onion,roughly chopped shopping list
- 2 cloves garlic,finely chopped shopping list
- fresh ground black pepper shopping list
How to make it
- Heat a 6 qt. pot of salted water to boiling. Add Brussel sprouts and cook till just tender,6 mins
- Using slotted spoon,transfer Brussel sprouts to bowl of ice water,let sit 5 mins.
- Drain Brussel sprouts and pat dry with paper toel;set aside.
- Heat 1 Tbs of oil in a 12" cast iron skillet over med-high heat. Add chorizo and cook ,stirring occasionally till browned,about 5 mins. Add onions and cook,stirring occasionally until golden brown and soft,about 8 mins. Add the garlic and cook till soft,about 2 mins more. Transfer chorizo mixture to a bowl. Increase heat to high and add remaining oil and the reserved Brussel sprouts;cook,flipping once or twice,until the Brussel sprouts are browned and tender.,about 8 mins. Stir in the reserved chorizo mixture and season with salt and pepper.

Absolutely a must try dish this Thanksgiving, a riff on the recipe I used last year with plain sausge...good stuff. Even the BS haters in our family loved the sprouts with sausage.
