How to make it

  • Preheat the oven to 350 degrees. Butter a 1cm HALF quart casserole and layer the drained beans over the bottom.
  • In a small heavy saucepan, melt the 1 tablespoon of butter over moderate heat, add the flour, and whisk for 1 minute. Slowly add cm HALF cup of the reserved cooking liquid from the beans, whisking until thickened and smooth.
  • Add the brown sugar, mustard and lemon juice. Season with salt and pepper and stir until well blended; pour over the limas.
  • In a small mixing bowl, combine the bread crumbs, 2 tablespoons melted butter and cheese. Stir until well blended and spoon the mixture evenly over the limas. Arrange the bacon slices over the top and bake until they are crisp, about 30 minutes.
