Lima Bean and Bacon Casserole

- 1 tablespoon solid butter plus 2 tablespoons melted shopping list
- Two 10-ounce packages frozen lima beans, cooked according to package directions, drained with cooking liquid reserved shopping list
- 1 tablespoon all-purpose flour shopping list
- 1 cup firmly packed light brown sugar shopping list
- 2 teaspoons dry mustard shopping list
- 2 teaspoons fresh lemon juice shopping list
- salt and freshly ground pepper to taste shopping list
- ½ cup dry bread crumbs shopping list
- ½ cup shredded sharp cheddar cheese shopping list
- 6 slices lean applewood or cob-smoked bacon shopping list
How to make it
- Preheat the oven to 350 degrees. Butter a 1cm HALF quart casserole and layer the drained beans over the bottom.
- In a small heavy saucepan, melt the 1 tablespoon of butter over moderate heat, add the flour, and whisk for 1 minute. Slowly add cm HALF cup of the reserved cooking liquid from the beans, whisking until thickened and smooth.
- Add the brown sugar, mustard and lemon juice. Season with salt and pepper and stir until well blended; pour over the limas.
- In a small mixing bowl, combine the bread crumbs, 2 tablespoons melted butter and cheese. Stir until well blended and spoon the mixture evenly over the limas. Arrange the bacon slices over the top and bake until they are crisp, about 30 minutes.
