Eggplant Pasta

- 1 1/2 Tbsp olive oil shopping list
- 1 large eggplant, peeled and sliced shopping list
- 1 Tbsp olive oil shopping list
- 1/2 cup onion, sliced shopping list
- 1 1/2 tsp garlic, minced shopping list
- 1/2 tsp oregano shopping list
- 2 tsp basil shopping list
- 1/4 tsp crushed red pepper shopping list
- 3 cups diced fire roasted tomatoes shopping list
- 1 lb penne pasta, cooked al dente shopping list
- 1 lb ricotta shopping list
- 8 oz mozzarella cheese, shredded shopping list
- parmesan cheese shopping list
How to make it
- Preheat oven to 425 degrees.
- Heat 1 1/2 tsp oil in a skillet.
- Brown the eggplant slices on both sides. Place on baking sheet and bake for 15 minutes. Set aside.
- Heat 1 Tbsp oil in a saucepan. Add the onion and garlic. Cook until soft.
- Add the oregano, basil, red pepper and tomatoes. Simmer for 20 minutes.
- Cook pasta until al dente.
- Toss tomato mixture with pasta and eggplant. Place in baking dish. Dot with ricotta and sprinkle with mozzarella.
- Place in 425 degree oven until cheese is melted (about 5 to 7 minutes)
