How to make it

  • Preheat oven to 425 degrees.
  • Heat 1 1/2 tsp oil in a skillet.
  • Brown the eggplant slices on both sides. Place on baking sheet and bake for 15 minutes. Set aside.
  • Heat 1 Tbsp oil in a saucepan. Add the onion and garlic. Cook until soft.
  • Add the oregano, basil, red pepper and tomatoes. Simmer for 20 minutes.
  • Cook pasta until al dente.
  • Toss tomato mixture with pasta and eggplant. Place in baking dish. Dot with ricotta and sprinkle with mozzarella.
  • Place in 425 degree oven until cheese is melted (about 5 to 7 minutes)
