Eggplant Pasta Recipe
This dish will please pasta lovers and vegetarians alike. This was inspired by a recipe found on Recipe4Living.

Ingredients
  • 1 1/2 Tbsp olive oil
  • 1 large eggplant, peeled and sliced
  • 1 Tbsp olive oil
  • 1/2 cup onion, sliced
  • 1 1/2 tsp garlic, minced
  • 1/2 tsp oregano
  • 2 tsp basil
  • 1/4 tsp crushed red pepper
  • 3 cups diced fire roasted tomatoes
  • 1 lb penne pasta, cooked al dente
  • 1 lb ricotta
  • 8 oz mozzarella cheese, shredded
  • Parmesan cheese

Directions
  1. Preheat oven to 425 degrees.
  2. Heat 1 1/2 tsp oil in a skillet.
  3. Brown the eggplant slices on both sides. Place on baking sheet and bake for 15 minutes. Set aside.
  4. Heat 1 Tbsp oil in a saucepan. Add the onion and garlic. Cook until soft.
  5. Add the oregano, basil, red pepper and tomatoes. Simmer for 20 minutes.
  6. Cook pasta until al dente.
  7. Toss tomato mixture with pasta and eggplant. Place in baking dish. Dot with ricotta and sprinkle with mozzarella.
  8. Place in 425 degree oven until cheese is melted (about 5 to 7 minutes)
