How to make it

  • Cut chicken into serving size pieces then coat the pieces lightly with flour which has been seasoned with salt.
  • Fry half the chicken in deep hot oil until golden brown then reduce heat and cook until chicken is cooked through.
  • Remove from oil and drain on absorbent paper then repeat the process with the remaining chicken then pour off excess oil leaving 1 tablespoon left in pan. Add peeled and grated ginger to pan and saute gently for 1 minute.
  • Add honey and stir for 1 more minute. Add combined cornflour, water, chili sauce, lemon juice and soy sauce and stir until sauce boils and thickens.
  • Add chicken and toss in sauce for 3 minutes or until chicken is heated through. Add sliced shallots and cook the Honey Chili Chicken for further 1 minute. Serve with a bowl of steamed rice.
