Zesty Thai Salad Dressing Recipe
This low-fat Thai dressing is just enough for the one person in the house who's on a diet or watching fat grams. Perfect on fresh spinach, watercress, bean sprouts, cukes, or any fresh veggies.

Ingredients
  • 1 T peanut butter
  • 1 T hummus (homemade or bought)
  • 1" fresh ginger, minced & pressed
  • 2 fresh cloves garlic, pressed
  • 1/2 t Gulden's spicy mustard
  • 1/4 t garlic chili paste
  • 1/4 t kosher salt
  • juice of 1 lime
  • 2 T rice vinegar
  • 1 T fish sauce (the best you can afford)
  • 1/4 c fresh orange juice
  • handful of minced fresh mint, cilantro, & basil leaves

Directions
  1. Mix everything together.
  2. Pour over salad.
  3. Eat!
  4. CEAHOW note: Remove 1/16th of your protein serving to accommodate using 1T of hummus in this dressing. Since it uses peanut butter, this is only for when you've reached Maintenance.
