How to make it

  • Chop chocolate into pea-sized pieces.
  • Heat heavy cream vanilla and on med-low until it begins to steam. Do not allow it to boil.
  • Remove from heat and stir in chocolate until completely melted. (If you used a vanilla bean, remove the pod before adding chocolate.)
  • Pour into a 9in x 13in pan.
  • Place pan in freezer for an hour or until it sets.
  • Remove from freezer and immediately begin scooping out 1/2 Tbsp portions. (A extra small ice cream scoop works well.)
  • Roll each portion into a ball. (You made need to return to the freezer to set if the mixture becomes too soft.)
  • Roll each ball into your choice of coating. (You may find it helps to roll each ball in your hand before trying to coat. Your body temperature will slightly melt the mixture helping the coating to stick.)
  • A few coating options are tempered chocolate (dark, milk, or white), powdered toffee bits, finely ground chocolate sandwich cookies, cocoa powder (can be mixed with espresso powder), confectioners sugar, finely ground cocoa nibs, or what ever you like. The possibilities are endless!
