Petite Cranberry Carrot Cakes

- 1 large egg , lightly beaten shopping list
- 1 cup applesauce shopping list
- 1 cup freshly grated carrot shopping list
- 1/4 cup sweetened dried cranberries shopping list
- 1 teaspoon ground cinnamon or apple pie spice shopping list
- 1 9 ounce box yellow cake mix (Jiffy) shopping list
- Butterscotch caramel ice cream topping, warmed shopping list
- 6 tablespoons chopped walnuts, toasted shopping list
How to make it
- In a medium bowl, combine egg, applesauce, carrot, dried cranberries and cinnamon
- Stir until well combined
- Stir in cake mix
- Coat 6 10 ounce custard cups with non-stick cooking spray
- Divide batter evenly among cups
- Bake in 350F oven until wooden pick inserted in center comes out clean, about 25-30 minutes
- Cool for 5 minutes and then invert onto wire rack
- Cool completely
- Serve with warm ice cream topping and sprinkle walnuts on top
