Petite Cranberry Carrot Cakes Recipe
Cute little individual carrot cakes. Would be a nice dessert for company, or not!

Ingredients
  • 1 large egg , lightly beaten
  • 1 cup applesauce
  • 1 cup freshly grated carrot
  • 1/4 cup sweetened dried cranberries
  • 1 teaspoon ground cinnamon or apple pie spice
  • 1 9 ounce box yellow cake mix (Jiffy)
  • Butterscotch caramel ice cream topping, warmed
  • 6 tablespoons chopped walnuts, toasted

Directions
  1. In a medium bowl, combine egg, applesauce, carrot, dried cranberries and cinnamon
  2. Stir until well combined
  3. Stir in cake mix
  4. Coat 6 10 ounce custard cups with non-stick cooking spray
  5. Divide batter evenly among cups
  6. Bake in 350F oven until wooden pick inserted in center comes out clean, about 25-30 minutes
  7. Cool for 5 minutes and then invert onto wire rack
  8. Cool completely
  9. Serve with warm ice cream topping and sprinkle walnuts on top
