How to make it

  • In a medium bowl, combine egg, applesauce, carrot, dried cranberries and cinnamon
  • Stir until well combined
  • Stir in cake mix
  • Coat 6 10 ounce custard cups with non-stick cooking spray
  • Divide batter evenly among cups
  • Bake in 350F oven until wooden pick inserted in center comes out clean, about 25-30 minutes
  • Cool for 5 minutes and then invert onto wire rack
  • Cool completely
  • Serve with warm ice cream topping and sprinkle walnuts on top
