DATE NUT LOG DIABETIC FRIENDLY

- Ingredients: shopping list
- 2 ½ cups reduced-fat graham cracker crumbs, divided shopping list
- 24 large marshmallows, snipped shopping list
- 8 -oz dates, chopped shopping list
- 2 cups chopped walnuts shopping list
- 1 ¼ cups heavy whipping cream shopping list
- Cool Whip, Optional shopping list
How to make it
- Method: Chill type.
- In a bowl, combine 2 cups of graham cracker crumbs, marshmallows, dates and walnuts. Stir in cream; mix thoroughly. Shape into a 14-inch x 3-inch log. Roll in remaining crumbs.
- Wrap tightly in plastic wrap or foil. Refrigerate at least 6 hours or overnight. Slice; garnish with Cool Whip if desired.

- Calories per serving: 275, Fat: 8g, Cholesterol: 30mg, Sodium: 110mg, Carbohydrate: 38g
