- Crust: shopping list
- 2 cups flour shopping list
- 1/2 cup oil shopping list
- 1/4 cup milk shopping list
- 1 tsp salt shopping list
- Filling: shopping list
- 1 cup chopped onion shopping list
- 2 chopped jalapeno peppers shopping list
- 4 eggs shopping list
- 2 cups milk shopping list
- 3/4 tsp nutmeg shopping list
- 3/4 cup shredded cheddar cheese shopping list
- 2 cups fresh baby spinach shopping list
- 1 tsp fresh ground pepper or to taste shopping list
- 1 Tsp sugar shopping list
How to make it
- Mix crust ingredients together and press into a deep pie plate. You will probably have leftover crust mix to make a tart or something. Pre-bake 10 minutes at 350 F.
- Saute chopped onions and jalapenos until lightly caramelized. Spread onion and pepper mix on the bottom of pre-baked crust. Rip spinach leaves and fill about 1/2 full. Sprinkle with nutmeg and shredded cheese. Finish filling pie plate up with spinach. Sprinkle pepper and 1 Tsp sugar. Whisk 4 eggs into 2 cups milk. Pour over spinach pushing leaves down while adding the egg and milk mixture. Bake at 375 F for 10 mins. then 350 F until knife inserted in center comes out clean and crust is brown. Sprinkle lightly with paprika. Let rest 10 mins. before cutting.
