How to make it

  • Over medium high heat, fry the sausage until some fat from the meat is rendered. (If the sausage is lean and you need a little additional fat to cook with, add a pat of butter or a splash of olive oil)
  • Toss in your diced onion, sliced mushrooms, cubed ham and cook til browned.
  • Add the can of chopped green chiles.
  • At this point, I like to add a few dashes of cayenne pepper, but you can omit if you like.
  • Set this mixture aside for now.
  • In a large bowl, combine the flour, baking powder, eggs, cottage cheese, shredded cheese and melted butter/margarine.
  • Lightly spray a 9 x 13 baking dish with nonstick spray.
  • Spread the sausage mixture in the bottom of the baking dish.
  • Pour the egg mixture over the top.
  • In a 350 degree oven, bake for 35 to 40 minutes, til eggs are set and lightly browned.
  • Delicious served with a side of salsa! I've also made this with fresh asparagus mixed in...the possibilities are endless!
