Sunrise Breakfast Bake Recipe

Ingredients

One medium yellow onion, diced

1 cup of sliced mushrooms

1/2 lb. of breakfast sausage (you can smoosh up links or patties if you have that)

1 cup of ham, cubed

small can of diced green chiles

dash of Cayenne pepper

2 cups cottage cheese, any style

2 cups monterey jack or cheddar cheese (( or both! ))

12 eggs

1/4 cup all purpose flour

1 tsp. baking powder

1/2 cup melted butter or margarine

Directions

Over medium high heat, fry the sausage until some fat from the meat is rendered. (If the sausage is lean and you need a little additional fat to cook with, add a pat of butter or a splash of olive oil)

Toss in your diced onion, sliced mushrooms, cubed ham and cook til browned.

Add the can of chopped green chiles.

At this point, I like to add a few dashes of cayenne pepper, but you can omit if you like.

Set this mixture aside for now.

In a large bowl, combine the flour, baking powder, eggs, cottage cheese, shredded cheese and melted butter/margarine.

Lightly spray a 9 x 13 baking dish with nonstick spray.

Spread the sausage mixture in the bottom of the baking dish.

Pour the egg mixture over the top.

In a 350 degree oven, bake for 35 to 40 minutes, til eggs are set and lightly browned.

Delicious served with a side of salsa! I've also made this with fresh asparagus mixed in...the possibilities are endless!
