Apple Cardamom Cheesecake Recipe
This is a very elegant, very tasty cheesecake that I got from an estate sale several years ago. I just made this last week for an office potluck and it was very popular.

Ingredients
  • 1-1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 3/4 teaspoon ground cardamom
  • 1/3 cup butter melted
  • Apples:
  • 4 medium cooking apples peeled and cored
  • 1/4 cup granulated sugar
  • 1/4 cup butter
  • 3/4 teaspoon ground cardamom
  • Filling:
  • 16 ounces cream cheese softened
  • 2/3 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon grated lemon peel
  • 4 eggs

Directions
  1. Combine all crust ingredients and press firmly on bottom and 1" up sides of spring form pan.
  2. Cut apples into 16ths then in large skillet combine apples with remaining ingredients.
  3. Cook until apples begin to caramelize turning often then arrange over bottom of crust.
  4. For filling beat cheese until fluffy then gradually beat in sugar, vanilla and lemon peel.
  5. Beat in eggs one at a time then pour over apples and bake at 325 for 65 minutes.
  6. Turn oven off and allow cheesecake to remain in oven 1 hour with door slightly jar.
  7. Cool completely n pan then chill several hours before serving.
