Harvest Soup

- 1 lb ground beef shopping list
- 3/4 c chopped onion shopping list
- 2 cloves garlic, minced shopping list
- 1 tsp salt shopping list
- pepper to season meat. shopping list
- 3 1/2 c water shopping list
- 2 1/4 cup sweet potatoes; peeled and chopped (1 sweet potato) shopping list
- 1 cup red potatoes; chopped (1 potato) shopping list
- 1 cup acorn squash; peeled, chopped (about 1/2 squash) shopping list
- 2 each beef bouillon cubes shopping list
- 2 bay leaves shopping list
- 1/2 tsp chili powder shopping list
- 1/2 tsp pepper shopping list
- 1/4 tsp ground allspice shopping list
- 1/4 tsp ground cloves shopping list
- 1 can diced tomatoes, undrained, 14.5 oz can shopping list
How to make it
- In a large soup pot, cook the beef over medium heat until the meat is no longer pink. Drain. Add the onions, garlic and salt and pepper. Cook 5 minutes.
- Add the water, potatoes, squash, bouillon, bay leaves, chili powder, pepper, allspice and cloves. Bring to a boil, then reduce heat.
- Cover and simmer for 20-30 minutes until the potatoes are tender.
- Note: The sweet potato and squash will be soft at this point.
- Add the tomatoes. Cook until the tomatoes are warmed through.
- Serve
