Pineapple Wine Or Pine Wine Recipe
Life and Food in the Caribbean by Cristine Mackie. I don't know how many this will serve, it depends if you want to share with friends or not. This tastes best if left for a year to ferment, but can be drunk much sooner.

Ingredients
  • 3 lbs of Pineapple, peeled (should weigh 3 lbs without peel and core) and cut into small chunks
  • 8 oz raisins
  • 8 pints boiling water
  • 2 tsp dry yeast
  • 3 lbs white sugar

Directions
  1. Place pineapple and raisins into a large earthenware jar and pour 8 pints of boiling water over them.
  2. Cover with a clean cloth with a small hole in the center. Leave in a cool dark place for 2 days, then add 2 tsp of dry yeast and 3 lbs white sugar. Stir well and leave until the process of fermentation has settled down (10 days). Strain into carefully sterilized bottles.
  3. Note: After fermenting, if it is too dry, you can sweeten your wine with a simple syrup. Two cups of sugar and 1 cup of boiling water or by using a juice or frozen concentrate. If you use juice, take 2 quarts of an alike juice and simmer on stove at medium heat with lid off until its 1/3 its original size and let it cool to room temp and then add slowly to taste. Be careful not to over sweeten.
