Red Onion Cannelloni Pasta Recipe

Ingredients
  • 2 Tbsp olive oil
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 2 Tbsp tomato paste
  • 2 cups vegetable broth
  • 2 tsp dried basil
  • 1 can cannelloni beans, drained and rinsed
  • 1 Tbsp butter (optional)
  • salt and pepper to taste
  • 1 package whole wheat fusilli
  • parmesan cheese for serving

Directions
  1. Cook noodles until tender. Drain and add 1 Tbsp butter if desired.
  2. Meanwhile, heat oil in skillet.
  3. Add onion and garlic. Saute for 2 minutes, until fragrant.
  4. Add beans, saute for one more minute.
  5. Add tomato paste, broth and basil. Bring to a boil and simmer for 10 minutes, or until slightly reduced. Add salt and pepper.
  6. Add broth to drained pasta and serve with parmesan cheese.
