Red Onion Cannelloni Pasta

- 2 Tbsp olive oil shopping list
- 1 small red onion, chopped shopping list
- 2 cloves garlic, minced shopping list
- 2 Tbsp tomato paste shopping list
- 2 cups vegetable broth shopping list
- 2 tsp dried basil shopping list
- 1 can cannelloni beans, drained and rinsed shopping list
- 1 Tbsp butter (optional) shopping list
- salt and pepper to taste shopping list
- 1 package whole wheat fusilli shopping list
- parmesan cheese for serving shopping list
How to make it
- Cook noodles until tender. Drain and add 1 Tbsp butter if desired.
- Meanwhile, heat oil in skillet.
- Add onion and garlic. Saute for 2 minutes, until fragrant.
- Add beans, saute for one more minute.
- Add tomato paste, broth and basil. Bring to a boil and simmer for 10 minutes, or until slightly reduced. Add salt and pepper.
- Add broth to drained pasta and serve with parmesan cheese.
