Ingredients
  • 1 cup butter
  • 1/2 cup cream cheese
  • 1 cup sugar
  • 1 egg, beaten
  • 1 Tbsp lemon juice
  • 1 tsp grated lemon rind
  • 1/4 tsp almond extract
  • 2 3/4 cups flour
  • 1 tsp baking powder
  • Apricot (or your choice) preserves

Directions
  1. Cream butter, cream cheese and sugar together well. Blend in egg, lemon juice and rind and almond extract. Add flour and baking powder and mix well.
  2. Chill dough one hour.
  3. Preheat oven to 375F. Shape dough into balls by level tablespoonful. Place on a greased cookie sheet; flatten slightly. Indent the centre of each ball and fill with 1/4 tsp preserves.
  4. Bake for 12 to 15 minutes or until lightly browned.
  5. Makes 4 dozen.
