Ingredients
  • 12 large chiles with stems, roasted and peeled (Anaheims, P The Big Jim variety, or Poblanos)
  • 1 lbs cheese, cut into strips
  • 1 lb thick-sliced ham, cut into strips
  • Batter:
  • 4 eggs, separated
  • 3/4 tsp baking powder
  • 4 tbs flour
  • 1/3 tsp salt

Directions
  1. Preheat oven to 350 degrees.
  2. To stuff chiles, cut small slits below the stem and remove the seeds. Place strips of cheese and ham inside slit.
  3. Beat egg whites until stiff, set aside. Beat yolks until thick, set aside. Sift together dry ingredients and add yolks, blending well.
  4. Carefully fold beaten egg whites into yolk mixture. Dip stuffed chile into batter, then fry in deep fat at 360 degrees until golden brown.
  5. Or place stuffed chiles in nonstick casserole, pour batter over them and bake in the oven about 20 minutes until batter is done and slightly browned. on top. Serve at once.
