Not Your Ordinary Chiles Rellenos

- 12 large chiles with stems, roasted and peeled (Anaheims, P The Big Jim variety, or Poblanos) shopping list
- 1 lbs cheese, cut into strips shopping list
- 1 lb thick-sliced ham, cut into strips shopping list
- Batter: shopping list
- 4 eggs, separated shopping list
- 3/4 tsp baking powder shopping list
- 4 tbs flour shopping list
- 1/3 tsp salt shopping list
How to make it
- Preheat oven to 350 degrees.
- To stuff chiles, cut small slits below the stem and remove the seeds. Place strips of cheese and ham inside slit.
- Beat egg whites until stiff, set aside. Beat yolks until thick, set aside. Sift together dry ingredients and add yolks, blending well.
- Carefully fold beaten egg whites into yolk mixture. Dip stuffed chile into batter, then fry in deep fat at 360 degrees until golden brown.
- Or place stuffed chiles in nonstick casserole, pour batter over them and bake in the oven about 20 minutes until batter is done and slightly browned. on top. Serve at once.
