Butterscotch Pie

- 1.5 c. light brown cane sugar shopping list
- 5 T. margarine shopping list
- 6 T. evaporated milk shopping list
- 1.5 c. milk shopping list
- 5 T. flour shopping list
- 3 egg yolks shopping list
- baked pie shell shopping list
How to make it
- In a large cast iron skillet, stir together the sugar, margarine (butter will scorch), and evaporated milk.
- Cook the mixture until it is brown, being very careful not to scorch.
- Let the mixture cool.
- Add the milk, flour, and egg yolks (save the whites for use in your favorite meringue recipe) and blend well.
- Cook until the mixture is thick like pudding.
- Pour into a 9" baked pie shell.
- Top with the meringue and bake according to your meringue recipe instructions.
