Moroccan meat loaf

- 2 pounds ground lamb shopping list
- 1 pound ground beef shopping list
- 2 tablespoons olive oil shopping list
- 1 yellow onion, chopped shopping list
- 1 large carrot, peeled, chopped shopping list
- 1 large celery stalk, chopped shopping list
- 2 tablespoons chopped garlic (about 6 cloves) shopping list
- 2 tablespoons minced fresh ginger (3-inch piece) shopping list
- 1 1/4 teaspoons kosher salt shopping list
- 1 teaspoon sweet paprika shopping list
- 1 teaspoon ground cumin shopping list
- 1 teaspoon curry powder shopping list
- 1/4 teaspoon cayenne shopping list
- 1/4 teaspoon ground cinnamon shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
- 1 1/4 cups dried bread crumbs shopping list
- 2 small eggs shopping list
- 1/4 cup chopped fresh cilantro shopping list
- 2 tablespoons chopped fresh mint shopping list
How to make it
- INSTRUCTIONS
- Preheat oven to 350 degrees.
- Combine lamb and beef in a large bowl.
- Set aside.
- Heat olive oil in a large skillet over medium-high heat.
- Add onion, carrot, celery, garlic and ginger, and cook for about 5 minutes or until onion is translucent.
- Add salt, paprika, cumin, curry powder, cayenne, cinnamon and pepper.
- Cook for 1 to 2 minutes.
- Remove from heat and let cool for 10-15 minutes.
- Stir vegetables into the meat.
- Mix in bread crumbs, eggs, cilantro and mint.
- Transfer to a 9-by-5-by- 3- inch loaf pan and set in a baking pan.
- Pour water into baking pan to reach halfway up the sides of loaf pan.
- Bake 1 1/2 hours or until firm and cooked through.
- Let rest 10-15 minutes.
- Unmold and slice.
