Glazed Cranberry Mini Cakes

- 1/3 cup butter or margarine softened shopping list
- 1/3 cup granulated sugar shopping list
- 1/3 cup packed light brown sugar shopping list
- 1 egg shopping list
- 1 1/4 tsp vanilla extract shopping list
- 1 1/3 cup all purpose flour shopping list
- 3/4 tsp. baking powder shopping list
- 1/4 tsp baking soda shopping list
- 1/4 tsp salt shopping list
- 2 Tbsp. milk shopping list
- 1 1/4 cups coarsely chopped fresh cranberries shopping list
- 1/2 cup coarsely chopped walnuts shopping list
- 2/3 cup Hersheys vanilla milk chips shopping list
- vanilla glaze shopping list
- 1 cup hersheys vanilla milk chips shopping list
- 2 Tbsp vegetable oil shopping list
How to make it
- Heat oven to 350
- Lightly grease or paper line small muffin cups
- In small mixer bowl beat butter, granulated sugar, brown sugar, egg and vanilla till light and fluffy
- Stir together flour, baking pwoder, baking soda, and salt:
- Gradually mix into butter mixture.
- Add milk
- Stir until blended.
- Stir in cranberries, walnuts and vanilla milk chips
- Fill cups about 7/8 full with batter
- Bake 18-20 min. or until wooden pick inserted comes out clean.
- cool 5 min. remove to wire rack to cool completely
- Vanilla Glaze
- in small microwave-safe bowl place vanilla milk chips, sprinks oil over chips.
- microwave on high 30 seconds, stir vigorously.
- If necessary microwave an additional 30 seconds until chips are melted when stirred.
- Drizzle over top of mini cakes refrigerate 10 min to set glaze
