The Best Meatballs

- 1.5 pounds extra lean ground beef or lean ground veal shopping list
- ½ of a medium sized onion finely chopped shopping list
- 1 small red pepper finely chopped shopping list
- 2 cloves garlic crushed shopping list
- 1 tbsp. chili powder shopping list
- 3 tbsp. hot sauce shopping list
- 2 eggs shopping list
- 1 cup no salt added bread crumbs shopping list
- 1 tsp. each pepper, thyme, ground coriander, and red pepper flakes (optional) shopping list
- I jar of healthy choice, low sodium pasta sauce heated through shopping list
How to make it
- Preheat oven to 420ºF. Cover a baking sheet with tinfoil (shiny side down) and spray lightly with vegetable oil or cooking spray.
- Place all ingredients (but not pasta sauce) in a large bowl and mix well. Make 2 inch meatballs and place on baking sheet, evenly spread apart. Place baking sheet in oven and cook for 15 minutes. Remove and turn meatballs over. Cook for another 10-15 minutes depending on doneness.
- Serve this with brown rice or whole wheat pasta and pasta sauce on top.
