How to make it

  • Wisk together milk, eggs, flour, 1 TBSP butter, salt and pepper until smooth.
  • Stir in cheeses and chives.
  • Chill and rest for an hour.
  • Preheat oven to 425 degrees with the rack in the upper third of the oven.
  • Butter the muffin pan with remaining TBSP butter then heat in oven until butter sizzlez, about 2 minutes.
  • Gently stir batter and divide among muffin cups, filling them 2/3 of the way.
  • Bake until puffed and golden brown, 18-20 minutes.
