As most of you already know, I am a CURRY FREAK !!! Well, Jamaican Curry is not an exception and it is as good and delicious as any other CURRY from around the world.

Ingredients
  • 3 lbs. of chicken (boneless) cut it into bite-sized pieces
  • 2 - 3 medium potatoes (peeled and diced)
  • 1 large onion (diced)
  • 2 scallions (chopped) optional
  • 1 scotch bonnet if available or green pepper (seeded & minced finely)
  • 2 cups of chicken broth or water
  • 2 Tblsp of vegetable oil
  • NOTE: Other vegetables like carrots, green peas, cabbage, etc. may be added. This recipe works perfect for either shrimp or pork as well.
  • Seasoning Spices:
  • Salt & black pepper (to taste)
  • 2 - 3 Tblsp of Jamaican curry powder (or to taste)
  • ½ tsp of allspice
  • 1 tsp of fresh or dried thyme leaves
  • 2 - 3 cloves garlic (minced)
  • 1 tsp of ginger (fresh grated or paste)
  • 2 Tblsp of vinegar

Directions
  1. Mix and rub all the seasoning spices into the chicken and allow marinating from 1 hour to overnight at the most.
  2. Heat the vegetable oil and add the marinated chicken.
  3. Cook for about 5 minutes stirring, and then add the broth and the rest of
  4. the ingredients.
  5. Cook on medium heat uncovered until meat is tender and the sauce is thick for about 4 - 5 minutes.
  6. Taste and adjust seasonings if necessary.
  7. Cover and lower the heat to a simmer, cook for another 30 minutes. Serve with white rice.
