How to make it

  • Pound flanksteak and create small piercings in it. Put into a well sealable bag and marinate in first 10 ingredients overnight.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Make a paste with remaining clove of garlic and salt. I found it easiest to use a strong spoon, but I've seen it made with the blunt end of a knife.
  • Remove steak from bag and discard marinade
  • Apply garlic paste to the top part of the steak
  • Place layers of onion, bread crumbs, spinach, and cheeses on top of the flanksteak
  • Roll the steak lengthwise and secure with cooking string or toothpicks.
  • Place rolled flanksteak in shallow glass dish
  • Cook uncovered in oven for 1 hour or until the interior temp reaches 145 degrees F.
  • Let stand for 5 minutes to set and cut into 1-2 inch slices.
