Flanksteak Pinwheels

- (marinade) shopping list
- 1/4 Cup olive oil shopping list
- 1/4 Cup soy sauce shopping list
- 1/4 Cup red wine (can substitute wine for beef broth) shopping list
- 1/4 Cup worcestershire sauce shopping list
- 1 Tablespoon mustard (dijon works best) shopping list
- 1 Tablespoon lemon juice shopping list
- 2 Cloves garlic-Minced shopping list
- 1 Teaspoon basil shopping list
- 1 Teaspoon oregano shopping list
- 1/2 Teaspoon black pepper shopping list
- 1/2 lb Flanksteak- Pounded to about 1/2 inch thick shopping list
- (Filling) shopping list
- 1 Clove Garlic- Peeled shopping list
- 1/2 Teaspoon salt shopping list
- 1/4 Cup chopped onion shopping list
- 1/4 Cup bread Crumbs shopping list
- 1 Cup Frozen Baby Spinach- Thawed and Dried shopping list
- 1/2 Cup Crumbled feta cheese shopping list
- 1/2 Cup Skim ricotta cheese shopping list
How to make it
- Pound flanksteak and create small piercings in it. Put into a well sealable bag and marinate in first 10 ingredients overnight.
- Preheat the oven to 350 degrees F (175 degrees C).
- Make a paste with remaining clove of garlic and salt. I found it easiest to use a strong spoon, but I've seen it made with the blunt end of a knife.
- Remove steak from bag and discard marinade
- Apply garlic paste to the top part of the steak
- Place layers of onion, bread crumbs, spinach, and cheeses on top of the flanksteak
- Roll the steak lengthwise and secure with cooking string or toothpicks.
- Place rolled flanksteak in shallow glass dish
- Cook uncovered in oven for 1 hour or until the interior temp reaches 145 degrees F.
- Let stand for 5 minutes to set and cut into 1-2 inch slices.
