How to make it

  • In saucepan cook sliced squash and chopped onion in boiling salted water for 7 minutes
  • drain
  • Combine cream of chicken soup and sour cream
  • Stir in shredded carrot
  • Fold in drained squash and onion (be sure to drain well)
  • Combine stuffing and butter with 1 cup boiling or hot water.
  • Spread 1/2 of stuffing mix in the bottom of 8x12 baking dish.
  • Spoon vegetable mixture atop
  • Sprinkle remaining 1/2 stuffing mix on top over vegetables and bake at 350 for 25-30 minutes or until heated throughout
