Rotisserie Chicken Chili

- 1 coooked rotissed chicken shopping list
- 1 small green bell pepper, seeded shopping list
- 1 medium onion shopping list
- 2 cloves garlic shopping list
- 1 Tbs whole cumin seeds shopping list
- 1 Tbs peanut oil shopping list
- 1 Tbs flour shopping list
- 1, 14.5 oz can of chicken broth shopping list
- 1, 15 oz can of pinto or kidney beans drained shopping list
- salt and pepper tot taste shopping list
- 1/4 cup shredded cheddar cheese grated shopping list
- 1 cup chopped fresh cilantro shopping list
- 1 lime quartered ( optional but nice ) shopping list
How to make it
- Remove skin from chicken and cut into bite size pieces
- Finely chop the bell pepper, onion and garlic
- Crush cumin seeds with morter and pestal or use coffee grinder
- In a skillet over medium heat, toast the cumin until fragrant
- Add oil and when oil is sizzling ,add pepper and onion mixture
- Cook till lightly colored, stirring often, about 5 minutes.
- Stir in the flour and blend well
- Stir in the broth and beans and chicken
- Season with salt and pepper.
- Cover and lower heat to a gentle simmer
- Cook about 20 minutes, satirring occasionally
- Stir in cheese, cook, 15 minutes more, stir occasionally
- Remove from heat, stir in the cilantro
- Season if needed with more salt and pepper
- Serve with lime quarters to squeeze over top if desired
