How to make it

  • Heat oven to 350 (180).
  • Using an electric mixer, beat egg whites and sugar
  • for 10 minutes, or till thick and glossy.
  • Mix vinegar. vanilla, andcornflour together.
  • Add to meringue.
  • Beat on high speed for a further fiveminutes.
  • Line an oven tray with baking paper.
  • Draw a 22 cm circle (approx 8 inch circle) on the baking paper.
  • Spread the Pavlova mixture to within 3/4 of an inch inside the edge of the circle, keeping the shape as round andeven as possible.
  • Smooth top surface over.
  • Place Pavlova in oven.
  • Turn oven temperature down to 210 F (100 C).
  • Bake Pavlova for one hour.
  • Turn oven off.
  • Open oven door slightly and leave Pavlova in oven till cold.
  • Carefully lift Pavlova onto a serving plate.
  • Decorate with shipped cream and fresh fruit such as sliced kiwifruit and strawberries etc
