Pavlova from New Zealand

- 4 egg whites shopping list
- 1 1/4 cups fine sugar ( caster sugar-fine granulated sugar ) shopping list
- 1 tsp white vinegar shopping list
- 1 tsp vanilla shopping list
- 1 Tbsp cornflour (cornstarch) shopping list
How to make it
- Heat oven to 350 (180).
- Using an electric mixer, beat egg whites and sugar
- for 10 minutes, or till thick and glossy.
- Mix vinegar. vanilla, andcornflour together.
- Add to meringue.
- Beat on high speed for a further fiveminutes.
- Line an oven tray with baking paper.
- Draw a 22 cm circle (approx 8 inch circle) on the baking paper.
- Spread the Pavlova mixture to within 3/4 of an inch inside the edge of the circle, keeping the shape as round andeven as possible.
- Smooth top surface over.
- Place Pavlova in oven.
- Turn oven temperature down to 210 F (100 C).
- Bake Pavlova for one hour.
- Turn oven off.
- Open oven door slightly and leave Pavlova in oven till cold.
- Carefully lift Pavlova onto a serving plate.
- Decorate with shipped cream and fresh fruit such as sliced kiwifruit and strawberries etc
