THYME CHICKEN WITH ROOTS

- 2 lbs potatoes, peel and cut into chunks shopping list
- 4 parsnips peeled and quartered shopping list
- 4 carrots peeled and quartered shopping list
- 1 red onion shopping list
- 4 tbsp olive oil shopping list
- 1 tbsp honey shopping list
- 1 orange; quartered shopping list
- 4 chicken breasts with skin shopping list
- few sprigs of thyme shopping list
How to make it
- Preheat oven to 375F.
- Parboil potatoes 5 minutes then drain.
- Lay potatoes, parsnips, carrots and onion in a large roasting pan.
- In a small bowl, mix oil, honey, and juice squeezed from quartered orange.
- Drizzle over vegetables and toss to coat evenly.
- Slash skin on the chicken, then place among the vegetables. Add squeezed orange quarters.
- Top with thyme.
- Roast chicken and veggies in oven turning from time to time for 1 hour or until chicken is golden and cooked through and all vegetables are tender.
- Throw out orange wedges & serve
