How to make it

  • Preheat oven to 375F.
  • Parboil potatoes 5 minutes then drain.
  • Lay potatoes, parsnips, carrots and onion in a large roasting pan.
  • In a small bowl, mix oil, honey, and juice squeezed from quartered orange.
  • Drizzle over vegetables and toss to coat evenly.
  • Slash skin on the chicken, then place among the vegetables. Add squeezed orange quarters.
  • Top with thyme.
  • Roast chicken and veggies in oven turning from time to time for 1 hour or until chicken is golden and cooked through and all vegetables are tender.
  • Throw out orange wedges & serve
