CURRIED CHICKEN WITH APPLES AND BANANAS

This recipe caught my eye. It seems quite odd. I haven't tried this, but I thought I would share it with all of you. Recipe courtesy of the book DIETITIANS OF CANADA GREAT FOOD FAST
Ingredients
- 2 tbsp veg. oil shopping list
- 1- 3lb chicken, skin removed and cut into 6 pieces shopping list
- 1 cup chopped onions shopping list
- 1 tbsp minced garlic shopping list
- 2 tbsp curry powder shopping list
- 2 tsp turmeric shopping list
- 1/2 tsp cumin shopping list
- 1/2 tsp coriander shopping list
- 1 cup diced peeled tart apples shopping list
- 1 1/2 cups bananas shopping list
- 1 1/2 cups diced tomatoes shopping list
- 1 cup low fat plain yogurt shopping list
- salt to taste shopping list
How to make it
- In a large saucepan, heat 1 tbsp of the oil over med high heat.
- Add half of the chicken pieces and cook, turning once, until brown. Repeat with the remaining oil and chicken.
- Transfer chicken to a plate and set aside.
- Reduce heat to medium.
- Add onions and garlic; cook for 5 minutes or until soft.
- Stir in curry powder, turmeric, cumin and coriander; saute for 1 minute.
- Add apples, bananas, tomatoes and chicken stock.
- Bring to a boil. Reduce heat and simmer uncovered, stirring frequently for 5 minutes or until liquid is reduced by half.
- Return chicken to pan and simmer for 30 minutes or until juices run clear.
- Stir in yogurt; simmer for 15 minutes stirring occasionally.
- Watch for curdling.
