How to make it

  • Combine 1 TBS of Greek seasoning with 1/4 cup of olive oil and the juice of 1/2 lemon. Mix and marinate the chicken at least 4 hrs or overnight.
  • Preheat oven to 350
  • In a oven proof skillet skillet on top of the stove over a med-high heat place pan and allow to come up to temp ( around 1-2 min)
  • Add chicken and saute for 3 minutes, turn over and repeat for 3 more minutes.
  • Place in oven and bake for 15 minutes.
  • Remove and allow to rest for 10 minutes.
  • Meanwhile place 1/2 cup of extra virgin olive oil in a bowl, the greek seasoning,red wine vineagr,honey, and lemon juice and whisk for 30 seconds.
  • Add the gorgonzola and feta and mash briefly and whisk for 30 seconds.
  • Arrange salad then slice chicken into 1/2 in slices and drizzle with vinagrette.
