Mandarin Orange Pound Cake

- 250 g butter or margarine shopping list
- 250 g sugar shopping list
- 1 Pkg vanilla sugar or 1 to 2 tsp vanilla shopping list
- 4 eggs shopping list
- 500 g flour shopping list
- 1 Pkg baking powder or 2 tsp shopping list
- 3 Tbs chocolate chips shopping list
- 2 cans mandarin oranges, drain , reserve juice and coarse chop the oranges if they are too large shopping list
- powdered sugar for glaze shopping list
How to make it
- cream butter and sugar
- add eggs one at a time
- Combine dry ingredients gradually by hand with wooden spoon
- stir in the chocolate chips
- Add the mandarin oranges minus 4 Tbs of the juice ( reserve for icing )
- Place in pan( tube or bundt ) bake 180C 60 to 70 minutes or tested done
- Cool 15 minutes in pan before removing
- When cold dust with powdered glaze made by mxining reserved mandarin orange juice and powdered sugar
- Freezes well
