How to make it

  • Cook green beans in boiling salted water just until tender crisp.
  • Drain beans, reserving 1/2 cup cooking water.
  • In large skillet, melt butter.
  • Saute onion and parsley until onion is softened.
  • Stir in flour to make a roux and cook until bubbly.
  • Slowly add reserved bean cooking water and cook over medium heat until sauce thickens.
  • Remove from heat and stir in remaining ingredients.
