Salmon Mousse

- 200g (7oz) cream cheese shopping list
- 150g (5oz) smoked salmon shopping list
- 1 tablespoon horseradish shopping list
- juice from 1/4 of a lemon shopping list
- 1/4 teaspoon white pepper or a wee dash of hot sauce shopping list
- about 5 strands of chives, chopped and added at the end shopping list
- *DO NOT put the chives in the food processor or blender. Just fold them in at the end. This is also nice if you want to fold 1/4 to 1/2 teaspoon of chopped pickle into the already processed cream cheese and salmon. You don't want the salmon taking on a greenish tinge and that is why I suggest folding the chives or finely chopped pickle. shopping list
- Garnish with slices or wedges of lemon. shopping list
- Serve with a fresh loaf of wholemeal bread. shopping list
How to make it
- Blend the cream cheese, salmon, horseradish, lemon juice and seasoning in a processor or blender until smooth.
- Blend the chopped chives thoroughly.
- Pour mixture into a ramekin.
- Chill until ready to serve.
- Garnish with lemon and a side dish of capers.
- Serve with buttered brown bread cut into chunks or slices.
