How to make it

  • In large skillet,heat oil over med-high heat. Add garlic,shallot and thyme,saute for 3 mins.
  • Mix in zucchini,bell pepper and lemon peel,stir and cook for 2 mins. Lower heat and cover,cooking 3 mins.
  • In a small bowl,combine lemon juice with avocado. Add to skillet and gently mix. Cook for 2 mins to allow flavors to blend.
  • Makes a great accompaniment to roasted meat and poultry.

    OOOOHHHH!! My mouth is just waterin... I can see in my future a nice roasted chicken rubbed with sage anf thyme and some roasted yukon potato's and last but not least, This BEEUTIFUL Accompiant ( I hope I spelled it right?) HIGH FIVE FORKS!!!!!
