Holiday Vegetable and Hass Avocado Saute

- 1-1/2 Tbs avocado oil or olive oil shopping list
- 2 tsp finely chopped garlic shopping list
- 1/2 large shallot,finely chopped shopping list
- 1/2 Tbs fresh thyme leaves shopping list
- 3 zucchini,cut in half lengthwise and sliced 1/4' thick shopping list
- 1/2 red bell pepper,cut in 1" squares shopping list
- 1 Tbs grated lemon peel shopping list
- 1-1/2 Tbs fresh lemon juice shopping list
- 1 ripe,fresh hass avocado,seede,peeled,cut in chunks shopping list
How to make it
- In large skillet,heat oil over med-high heat. Add garlic,shallot and thyme,saute for 3 mins.
- Mix in zucchini,bell pepper and lemon peel,stir and cook for 2 mins. Lower heat and cover,cooking 3 mins.
- In a small bowl,combine lemon juice with avocado. Add to skillet and gently mix. Cook for 2 mins to allow flavors to blend.
- Makes a great accompaniment to roasted meat and poultry.

OOOOHHHH!! My mouth is just waterin... I can see in my future a nice roasted chicken rubbed with sage anf thyme and some roasted yukon potato's and last but not least, This BEEUTIFUL Accompiant ( I hope I spelled it right?) HIGH FIVE FORKS!!!!!
