How to make it

  • In a shallow dish, mix cognac with 1/2 of sugar. Add apples, turning to coat. Let stand 30 minutes. Sift flour and salt into a large bowl and mix in remaining sugar. Make a well in center and drop in egg yolks. Using a wooken spoon, draw flour into yolks while gradually adding milk. Beat to a smooth batter, then let stand 30 minutes. In a separate bowl, whisk egg whites until stiff and fold into batter with 1tbs. oil.
  • Heat oil for deep frying to 385 F.
  • Drain fruit and dip each ring into batter to coat. Deep-fry a few at a time, turning once, until puffed up and golden-brown. Drain on paper towels. Sprinkle with powdered sugar. Serve hot... Enjoy.....
  • Variation; Use pineapple, pears or bananas in place of apples, soaking fruit in an appropriate liqueur 30 minutes.....
